Recipes with Highland Beef
Highland beef is lean and well-marbled. It is known for its succulent flavor and tenderness. Like other lean meats, Highland beef is best prepared "low and slow", and care should be taken to not overcook.
Grass-fed beef can be less tender than grain-finished beef from a feedlot. To get a perfectly tender grass-fed steak, we recommend a dry brine:
Another approach we have used for steaks with success is the Reverse Sear Method. Using this method, you first bake the steaks in a slow oven until it reaches an internal temperature 10 degrees below the ideal temperature for the level of doneness you desire, then sear in a hot pan or on a grill. Try it, it works!

- Season the steak with 1 tsp. coarse sea salt per side
- Let sit for 1 hour per inch of thickness
- Rinse the steak well
- Dry completely
- Grill, cook or broil using your favorite method
- Season with pepper and add a pat of butter
- Let rest for 5 to 10 minutes (very important)
